    B. Good’s Ethos

The food ethos revolves around four principles: source sustainably, cook seasonally, support local farmers/suppliers, and “stay fresh and balanced.” The website even includes an updated list of the daily seasonal ingredients that are sourced locally and the specific farms from which they come. For instance, this list has featured apples from Klein’s Kill Fruit Farm in Germantown, NY, Brussel sprouts from Satur Farms in Cutchogue, mushrooms from MJB Mushroom in Avondale, PA, and red onion from Minkus Family Farm in New Hampton, NY.

Substitutions and deletions are welcome here. When ordering a veggie burger, diners can substitute the bun with a gluten-free option, or go sans bun and opt for crisp veggies instead. Eliminate egg and dairy to “veganize” certain dishes like the harvest kale salad {kale, Brussel sprouts, cheddar cheese, sunflower seeds, beets, squash, garbanzos, sherry vinaigrette}, the Power Bowl (kale, sesame carrots, Brussel sprouts, crunchy chickpeas, sunflower seeds, local egg, + tomato vinaigrette} or the spicy avocado + lime {kale, sautéd veggies, avocado, black bean + corn salsa, tomato, queso fresco, lime, cilantro, chipotle puree, + red pepper vinaigrette}.
