Team Behind Halifax Opens New Cocktail Bar in Uptown Hoboken

Hoboken is welcoming yet another locale to its food and drink scene. The team behind Halifax first announced the opening of a new restaurant and bar experience, called Little Bar, back in August — and it’s officially opening its Hoboken doors on November 3rd. This new spot is bringing a unique European-style experience through cocktails and food in a quaint ambiance. Little Bar is located at 1401 Hudson Street in uptown Hoboken. Team HG was able to get a preview of the new spot. Read on to learn about what we know about Halifax’s newest project, Little Bar.

What We Know + About Halifax

Known as the W Hoboken’s fine dining restaurant, Halifax has Nova Scotia native Chef Seadon Shouse on its team — who prepares daily lunch, dinner, and weekend brunch menus for restaurant-goers. To make these menus, the chef uses ingredients from Nova Scotia and the Atlantic seaboard. Halifax is located at 225 River Street in Hoboken.

Though partly inspired by Halifax, Little Bar still very much has its own unique environment. Customers can expect to feel like they are in a “European-style neighborhood,” per a press release. The new eatery + bar seeks to create an across-the-world experience without leaving the Mile Square. Back in August, The Little Bar team told HG that the spot will be “warm and welcoming place with preserved bites and artisanal cocktails.”

In terms of food, Halifax’s — and now Little Bar’s —  Executive Chef, Seadon Shouse, said in a press release: “Offerings will include preserved seafood ranging from basic sardines to choices for the gastro-curious, like tuna belly or hand-picked cockles, all complemented by an array of hand-crafted cocktails and fine wines.” The food will be served as boards, with various options to choose from.

In addition to Chef Seadon, the culinary team consists of Michael Barry and Weng Lee from the Halifax team.

“In creating Little Bar, we hope to curate a celebration of the art of preserved flavor with uniquely crafted spirits in a European-style sophisticated local haunt,” Chef Seadon said in a press release. “Little Bar will spice up Hoboken’s already innovative food scene.”

 

Besides its food, the spot provides a small bar experience in a “sophisticated” setting (hence the name). Little Bar is serving up a range of classic cocktails and new, experimental selections. The Halifax team said locals should be prepared for “surprises” with their beverage options. Some of the drinks on the menu include the “That’s a Damson Good Negroni” (Citadel gin, Campari, + Damson plum); the “What’s That Across the Hudson?” (Angel’s Envy Bourbon + Seadon’s Sweet Vermouth); and the “Heaven, Hell, Hoboken” (Michter’s Small Batch Rye Whiskey, absinthe, + cacao); among others.

For dessert, customers can choose from Chocolat Pot du Creme with ganache or cookie crumble and Vanilla Panna Cotta with plum jam.

Little Bar was in the final stages of construction back in August, with an original opening date of late September. The new spot opens to the public on Friday, November 3rd, 2023. There are 24 seats at Little Bar — reservations can be made through SpotOn Reserve here and are strongly suggested, though bar seats are first come, first served.
