Gemini, a new Latin American cafe, soft-opened yesterday at 506 Jersey Avenue in Jersey City. The cafe is in the location of the former Subia’s Vegan Cafe, just steps from Van Vorst Park. About Gemini Cafe
According to Gemini’s soft opening menu, the cafe will serve breakfast, lunch and dinner, as well as coffee and tea. “Gemini is rooted in connection, community, and transformation,” said an Instagram post from the cafe. “Inspired by flavors from across Latin America, we serve fresh, feel-good dishes made with quality ingredients and a modern touch. We hope you’ll join us around the table… and come back for seconds (and thirds).”

“Off the counter” options include croissants and empanadas that rotate in flavor weekly. For breakfast and lunch, Gemini is serving up burgers, salad and protein bowls, croissant and waffle sandwiches, and huevos rancheros. Dinner options include shrimp ceviche, lime chicharron skewers, roasted corn ribs, and stuffed mini peppers. For those with a sweet tooth, dessert comes in the form of a spicy tajin fruit bowl, mango cheesecake, rice pudding, and a sea salt brownie. The eatery also serves a standard menu of espresso drinks, an array of teas, and several mocktails, including a hot toddy, apple mint refresher, strawberry basil spritz, and a passionfruit mojito.

Gemini is located in the former site of Subia’s Vegan Cafe, a Jersey City staple that closed earlier this year after 24 years serving juices, smoothies, breakfast, lunch, and dinner at 506 Jersey Avenue. According to NJ.com, the cafe was a filming location for the 2024 movie A Complete Unknown, starring Timothée Chalamet and Elle Fanning. It was used to replicate a 1963 version of Caffè Reggio, an iconic Italian eatery located at 119 MacDougal Street in New York City. HDSID teased the opening in an Instagram post on June 31st.
“For over two decades, they’ve [Subia’s] served up more than just homemade vegan comfort food… they’ve created a space filled with love, culture, connection, and community care. A place so many of us have walked into and instantly felt at home,” said an Instagram post from Jersey City Moms. “Thank you, Subia, for feeding our community in every way that mattered. You will truly be missed.”

But all isn’t lost for those who follow a vegan diet. The new Gemini Cafe has several vegan options on its menu, including a chopped salad, an Impossible meatball sub, roasted corn ribs, stuffed mini peppers, sweet-heat crostini, eggplant babaganoush, a seasalt brownie, and Subia’s BLT, an homage to the cafe that came before it.

According to an Instagram post from Gemini Cafe, a few final touches are still coming together in the space, but it will be open from 8AM to 8PM daily. Walk ins are welcome, and the cafe’s offerings will soon be available on food delivery apps including GrubHub, Uber Eats, and Doordash.
“We’re excited to start serving the neighborhood,” said an Instagram post from the cafe. “As we settle in over the coming days, we’ll be fine-tuning our menu, hours, and service with your feedback in mind.”
