A Brief History

Japan is known today as the sushi hub of the world, but the dish’s origins actually date back to the 2nd or 3rd century in Southeast Asia, specifically in China, where people would wrap salted fish in fermented rice in order to preserve it, freeze it and then consume it months later. The kind of sushi we eat today has evolved and changed depending on different regions, and is now called nigiri-zushi or “quick sushi”. Since the 1960s, this deliciously trendy cuisine has become part of American fare. Diners can enjoy sushi in a variety of ways including sashimi-style, in rolls, Poke-style, raw, fried even without any fish — there’s no wrong way.
