Hoboken and Jersey City are forever welcoming new businesses to Hudson County. In just one week, 11 new spots have either announced their arrival in the area or given progress updates ahead of their openings. From pickle shops to vintage boutiques, The Hoboken Girl is here to keep readers up to date on the latest spots opening in our communities. Apollo Bagels | 324 Washington Street, Hoboken

The HG team confirmed back in May that a popular NYC bagel shop would be making its way across the Hudson. Apollo Bagels, moving into the former Jerrell’s Betr Brgr location in Hoboken, is expected to open its doors (sooner than initially anticipated) with a menu featuring bagels, sandwiches, and fresh whitefish. On July 10th, the bagel spot took to social media to announce that it’s hiring. “Apollo Bagels is opening soon in Hoboken, and we’re looking for kind, hardworking individuals to join our team,” an Instagram caption reads.

Archives Vintage Boutique | 1 Newark Street, Hoboken

Archives Styling Studio, a secondhand shop in Guttenberg selling vintage, designer, and contemporary clothing items and accessories, has announced plans to open a second outpost in Hoboken under the name Archives Vintage Boutique. Owner Alicia Rosato shared with HG a peek into the Mile Square space, adorned with retro decor and chic fashion pieces.
The DRIP Uptown | 1427 Grand Street, Hoboken

DRIP Fitness, known for its Pilates, cycling, HIIT, and barre classes, is gearing up to open a Uptown Hoboken location. The fitness studio is currently located in downtown Hoboken at 44 Hudson Place, and has other locations in Caldwell as well as Melbourne, Florida. The DRIP team shared with HG that the second site, set to open later this summer, will feature an infrared mat studio, a reform studio, and a cycle studio.
Jersey Pizza Shop | 855 Bergen Avenue, Jersey City

Jersey Pizza Shop is Jersey City’s newest foodie spot. Promising a menu of authentic NYC-style, thin-crust pizzas, the restaurant opened its doors in early July. Along with the quintessential Italian dishes, the menu features sandwiches, salads, and desserts such as milkshakes, ice cream, gelato, and Italian ice. “Our goal is to bring something truly special to the neighborhood: delicious food in a cozy, welcoming atmosphere,” the Jersey Pizza Shop team shared with HG.
Kkot Floral Studio | 304 Newark Avenue, Jersey City

NYC Bouquet, a flower shop based in Queens, is opening a second location in Jersey City. The business, which will rebrand as Kkot Floral Studio upon the opening of its next outpost, sells floral bouquets for every occasion. The shop is planning to open in August.
Little Mingo | 305 1st Street, Hoboken

The Mile Square, home to almost 40 coffee shops in the area, will soon welcome another one to 1st Street in the former Sub Master space. Little Mingo will triple as a coffee, crepe, and waffle bar. The HG team first reported on the business’s arrival in April, and according to a recent Instagram post, Little Mingo appears to be preparing to open.
Pickle Joy | 55 1st Street, Hoboken

A first for the Mile Square, Pickle Joy, a new dedicated pickle shop, has put up signage on 1st Street. According to the sign, the spot will sell “Old World Style Pickles.” Located next to The Roost, the 1st Street space formerly housed First Street Barbershop, which relocated to 80 Hudson Street.
Don Goyo Taco Mexicanos | TBD

An HG reader spotted signage for a new taco spot called Don Goyos Tacos Mexicanos in Jersey City’s Heights neighborhood. While its affiliations are not yet confirmed, there is speculation that it could be linked to the Taquitos Mexicanos food truck, parked at 45 Congress Street, in the corner of New York Avenue + Congress. The soon-to-be spot may also be connected to the Tacos Don Goyo franchise, which has locations in New York City and California. The specific location and business details are currently unknown as of this writing. HG will update this post with more information.
San Patricios | TBD

The team behind The Dead Rabbit, an iconic Irish pub in NYC, has announced its newest business venture via social media. Meet San Patricios, a soon-to-debut Irish + Mexican fusion bar coming to Jersey City. The bar is named after the Batallón de San Patricio, the Mexican military force, formed in 1846. The group was led by John Riley, “a crew of Irish soldiers defected from the US to fight alongside their Mexican camaradas,” the business shared on Instagram. “In @sanpatriciosnj, we’re channeling the rebel spirit of our namesake, paying homage to those who fight for what’s right, no matter the cost. And sure, there’s also the Tequila and Mezcal, Whiskey and Poitín, and world-renowned, raucous partying.”
Stretch Med | 1108 Washington Street, Hoboken
Hoboken fitness gurus will soon have a new space to loosen up their muscles. Signage for Stretch Med, a one-on-one assisted stretching studio that aims to “eliminate chronic pain, increase mobility, [and] rejuvenate,” as per its website, was spotted on Washington Street in Hoboken. An opening date is unknown as of this writing.

Van Leeuwen | 537 Washington Street, Hoboken
The ice cream franchise Van Leeuwen, known for its creamy creations and vegan options, opened its first Hudson County store in Jersey City at 347 Grove Street in August 2024. Plans for a second Hudson County location have been on Hoboken residents’ radar since November 2024. The soon-to-be spot will be located in the former Glosslab space on Washington Street. Van Leeuwen seems to be inching closer towards opening, as the HG spotted freezers being installed in early July.
