Owner, head pastry chef + mastermind behind the brand, Jennifer Choi has made a name for herself in the culinary world and her talents are second to none. Her designs reflect a modern look, are totally Instagrammable, and delicious to boot. The process begins about three to six months before the big day {but Jennifer is able to make accommodations with less time, if necessary} and involve developing a color palette and creating a vision. Pricing for custom-made designs range but average at about $10/slice. Tastings are available for creations over $300 and is a great way to help decide on flavor combinations. Sugarsuckle also makes small desserts such as cake pops, mini cupcakes, dessert jars, French macaroons, and cookies for dessert tables and favors. It’s a one-stop-shop for all things sweet.

Cocoa Bakery Cafe {275 Grand Street, Jersey City + 475 Central Avenue, Jersey City}

This local JC gem is the perfect spot to build something custom thanks to their pristine attention to detail. They have experience in creating both bold and delicate designs for every couple. What sets them apart from the rest are the flavor combinations. Each pastry chef has his or her own style and favorite flavors {think chocolate, raspberry, + hazelnut —the owner’s favorite} and can help bring any vision to life. They also proudly offer vegan and gluten-free options, too. To begin the process, make an appointment about two to three weeks in advance. Cupcakes are a helpful way to test out flavor combinations and are always available for purchase. Pricing depends on size, flavor, frosting, filling, and design. Standard cakes come with one complimentary design in three colors but custom-made ones are always available.

The Hudson Cakery {1816 Willow Avenue, Weehawken}

Head pastry chef, owner, + Hoboken resident, Jennifer Bunce-Timmons, has an incredible sense of design and brings the ideas and love of a couple to life. Not only do her designs look fabulous, but they also taste delicious. Just ask HG founder + Editor in Chief, Jen Tripucka who chose a delectable naked red velvet creation for her big day. She bakes with flavors like salted caramel buttercream, though Jennifer’s favorite combos include white vanilla with coconut or Oreo buttercream. Start the process sooner than later, as they tend to book up rather quickly. Most couples come in around two to 12 months in advance. 

Carmen Rosa’s Bakery {37 Coles Street, Jersey City}

This mother-daughter-owned shop is known for whipping up all things sweet, especially their Dominican-style cakes. {Think a more buttery, creamy batter together with flavors such as pineapple and guava topped with a vanilla meringue frosting.} Most clients of Carmen and Vanessa come in with design and flavor inspiration. With that, they work to create your dream design for the big day. Combinations of buttercream, fondant, and meringue frosting can be crafted with different flavors based on preference. Vanessa recommends coming in at least a month before the event with photos and ideas to map everything out. Pricing varies based on the size and design of the cake, but standard cakes will run about $32 per pound {feeding 15 people per pound}. Baking Mama {88 Hudson Street, Hoboken}

Tina Rivera, our favorite Baking Mama, is all about the simple pleasures in life and that is reflected in her work, using only the purest and most natural ingredients. “The trend now is simple, basic, naked designs with fresh flowers and fruits,” explained Tina. Tina specializes in custom-made desserts. Of all the flavors used, the most popular seems to be chocolate and dulce de leche, for obvious reasons. Tina recommends clients to come into the shop to discuss their dreams. Be sure to bring photos and other ideas for inspiration —it will help the pastry chef to bring a vision to life. Baking Mama also offers gluten-free and vegan options for all customers and typically uses an American buttercream as frosting and fondant as design. Pricing varies depending on the setup, intricacy, and flavors.

Carlo’s Bakery {95 Washington Street, Hoboken}

Best known for his show on TLC’s Cake Boss, Buddy Valastro, owner and pastry chef of Carlo’s Bakery, knows how to draw a crowd. The shop is a local hotspot and has hundreds of people flocking to order desserts and pastries day in and day out {with dozens of locations now across the country}. Ordering a custom-made design is easy, set up an appointment to discuss designs and details. Typically, fondant and buttercream are used to dress it up and intricate designs are always accommodated. The best way to reach the shop is to stop by and set up an appointment in person. 

The cake is an iconic part of the wedding celebrations and something that is remembered for a lifetime. It is also customary to save the top tier for the one year anniversary, so be sure to choose a flavor that will be memorable for that special day, too.
