The Ark Cafe

The Ark Cafe is Hoboken-based. The cart mainly focuses on large corporate events, but is available for other types in New Jersey, New York City, and Connecticut. What makes The Ark Cafe unique is that it designs the cart around the company holding the event. The cart can be decorated with the logo and comes with personalized cups for each drink, too. The menu includes generic espresso drinks like cappuccinos and lattes. Additionally, they sell “premium” options, which include non-espresso drinks like matcha, turmeric, and chai lattes.
Caf Me If You Can
Caf Me If You Can is the mobile coffee cart addition to their coffee bar at Hamilton Cove Tower at 800 Harbor Boulevard in Weehawken. The bar is open Monday through Friday between 7:00 AM and 11:00 AM. While the bar is open year-round, the cart stays on Pier A of the Hoboken waterfront. Monday through Saturday between the months of April and October. The cart also appears at small business events and is available for private events, too.

Duo Donuts

Duo Donuts is a matcha and donut cart, specializing in different flavors of matcha lattes and donuts. So far, the cart has done pop-ups around Hoboken. But, it is currently in the process of opening a permanent storefront on 12th Street in addition to their cart.
La Donna Cafe

TikTok creator @donnalovescoffee founded La Donna Cafe in Hoboken in August 2025. The former barista went viral for her “making coffee for my coworkers” series. The cart is based in Hoboken and hosts events like an April matcha pop-up bar. La Donna Cafe serves a variety of drinks, specializing in iced lattes and matchas. The cart is also available for private bookings throughout New Jersey.
Thelis Coffee

Thelis Coffee is more than just the drinks. For every event, each coffee or other drink comes with a complimentary flower, and many of the drinks are decorated with petals. The cart is inspired by the founder’s grandfather from Greece. The menu has typical beverages like lattes and matcha, and Greek-inspired drinks like Freddo cappuccinos and matcha lattes (Freddo is a Greek method of making coffee where the espresso is shaken or frothed and then topped with frothed milk).
To and Brew
To and Brew is the newest coffee cart addition to Hoboken. The cart was founded by friends Maria Solomon and Danielle Mizrahi. It launched on June 6 at Pier A in Hoboken. For the rest of the month, the cart will pop up at different places on the Weehawken Waterfront. The cart is also available for private events.

Trackside Jo
It’s not a coffee cart nor a cafe. Trackside Jo is a coffee kiosk found at Lackawanna Station in Hoboken. The store’s lack of any seating is a part of its business motto. The stand’s purpose is meant to be a “commuters’ first stop,” according to its site.

Unova Tea

Unova Tea is a vegan tea company founded by Janasha Sisco in November, 2024. Unova Tea is an online business that is only sold in person at three venues in New Jersey. The company has also done pop-up events in Jersey City and Hoboken. However, on May 28, Unova Tea announced that it will be opening a mobile tea cart for Jersey City, North Jersey, and New York City in June. It will sell herbal tea, refreshers, matcha, and baked goods from Balthazar Bakery.
