Chef Seadon Shouse, who grew up off the grid near Halifax, Nova Scotia, brings that philosophy from his childhood to the restaurant’s coastal menu, which is centered around seasonality, authenticity, and regional sourcing.
One thing we love about Halifax is its hands-on approach. Between the house-made breads (yes, Chef Shouse makes most of the breads, including sourdough, on-site), house-cured meats, smoked specialties, foraged mushrooms, ingredients grown in Shouse’s garden, and local meats + seafood, its origin-centric culinary program is very diverse. However, its use of local farms and sources is also what makes Halifax a unique, scratch-made, hyper-locally fresh culinary experience. Farm-to-fork dining is especially important in New Jersey, considering the many opportunities for seasonal, authentically-grown partnerships with farmers + food sources. Halifax is proudly part of this process, working directly with regional farmers, fishermen, producers, and vineyard partners, with many of these relationships spanning over 10 years. The Halifax team shared some of its sourcing partners with HG, including:

The sources deliver directly to Halifax, and they “focus on the farmer so that they get 100% freshness and nutrition from the food.” This local sourcing enhances the cooking process, with ingredients spending little time in transit, lasting longer, and tasting better.
