A new wellness-focused eatery is on the way to Hoboken. Springbone Kitchen, the popular health-forward chain known for its bone broth, bowls, and clean comfort food, is gearing up to open at 506 Washington Street. The spot, taking over the former Bon Banh space, has been under construction and is shaping up to open soon. A representative previously confirmed the Hoboken plans with our team, and now locals can expect the brand’s signature feel-good menu to arrive in town soon. About Springbone Kitchen
Springbone Kitchen was founded in 2016 by Englewood, NJ, natives Jordan Feldman and Sam Eckstein. The first location opened in Greenwich Village, and the brand now has 10 locations throughout NYC and one in Millburn, New Jersey. The brand has plans to expand further, with at least 10 locations in the Washington, DC area on the horizon.

The fast-casual brand is best known for its bone broth and protein bowls. The bone broth is also used to cook things, including rice, infusing them with higher protein content. There are menu options for vegans and vegetarians, and the entire menu is gluten-free. The protein bowls have a mix of grain, vegetables, and meat options. The bone broths come in a variety of flavors and also have vegan and vegetarian options. The restaurant also sells smoothies and desserts, all made with health-conscious ingredients.
Bone broth is a popular food for protein and other minerals, according to the Harvard Medical Review.
Hoboken Location
Company founder Jordan Feldman confirmed the brand’s plans to come to Hoboken with The Hoboken Girl team in September 2025, sharing that an opening is on the horizon. “We’re anticipating opening early next year,” he said.
Springbone Kitchen will be located at 506 Washington Street, a spot locals may recognize as the former home of Bon Banh. The Vietnamese café occupied the space from May 2022 through September 2025.
Construction has been underway, and progress is steadily moving forward, with the opening expected in the coming months. We’ll update this piece as more details are announced.
