One of Jersey City’s most popular pop-up bakeries now has a permanent home. Sourdough Society, a staple of the Hamilton Park and Coles Street Farmers Markets, recently soft opened in Jersey City’s Harborside building. The Hoboken Girl chatted with Sophie, half of the couple behind Sourdough Society, about the move and what customers can expect. About Sourdough Society
Married Jersey City couple Sophie and Giota spent their careers working in corporate America until one day they were both faced with layoffs. What began as a difficult chapter gave the two some much-needed downtime to pause, reflect, and think about what they truly wanted for themselves. During this time off, Giota decided to reignite an old pandemic hobby: baking sourdough bread.

As the baking continued in 2024, Sophie began wondering if there could be potential to sell Giota’s creations. So, on a complete whim, she listed Giota’s sourdough on Facebook Marketplace, and it took off, telling HG, “To our surprise, people started ordering. They loved it.

The positive feedback and repeat requests gave us a sign that we might be onto something. What started as a way to make a little side income quickly grew into something bigger.” In January 2025, the duo got serious about the business, formed an LLC, and set up the groundwork to participate in two local farmers’ markets, Coles Street Market and the Hamilton Park Farmers Market.
All of the products are made with organic, all-natural ingredients. People loved Sourdough Society’s bread, and eventually, the team added sourdough cookies and then dog biscuits.
New Location
The new chapter for Sourdough Society is inside Nana’s Deli, located at 210 Hudson Street. Sophie previously told HG that it was a series of factors that led to the decision to move to a brick-and-mortar. “We needed more consistent access to a commercial kitchen, and with the seasonal markets ending, we were getting creative about where we could bake,” she said. “We got in touch with Jason Dworkin, with Nana’s Deli, and he offered us kitchen space and space in the shop.”

“We talked about it, what the commitment would be like, and realized that it was the ideal next step for a Jersey City-based brand,” Sophie said. “Our tagline is ‘your Jersey City Sourdough dealer,’ so having a Jersey City location just made sense.”

Sophie said she and Giota expressed their excitement for the new location when we first reported on it back in October. “The timing is great, with the markets ending for the season,” she said. “We’ll have a big counter space for customers and a large wall space to display the loaves.” The team will also have new offerings at the space, including take-and-bake sourdough pizza dough. “It will be great for family pizza night,” Sophie said. Giota is also experimenting with sourdough based phyllo pastries as a way to honor her Greek heritage.
Sourdough Society is now soft open in Jersey City as of November 12th. The shop is set to have its grand opening on Friday, November 28th, 2025.
