How Gregorys Coffee Started

Gregory Zamfotis and his father George Zamfotis started Gregorys Coffee in 2006. George had owned and operated ‘fast-casual’ stores in the New York metropolitan area for over 30 years with Greg always helping his dad at the stores. Greg went on to attend law school, thinking he would practice law as a career. But quite quickly he learned that he was less passionate about his legal career, and instead turned to food and beverage, something he had been working in his whole life. With the help of his dad, Greg launched Gregorys Coffee in NYC and has expanded to New Jersey as well as Washington DC.

This family-run business has always centered around what it can do for customers. The business has a deep focus on health and wellness that has strongly influenced the menu.

“We want folks to come into a Gregorys and feel comfortable, feel special, and feel like they are getting amazing products without having to wait very long,” Greg told Hoboken Girl.

A Look Inside Gregorys Coffee

Greg is the CEO and leader of all day-to-day operations. Greg’s sister Kristin leads the store design and social media efforts, while George oversees the bakery and commissary, which includes freshly baked items and roast coffee for all of the stores. Outside of the Zamfotis family, the Gregorys Coffee team describes the many amazing team members that have helped the company get to where it is today.

“Though we’re a specialty coffee brand first, we’re so much more than coffee, incorporating lifestyle and wellness into our holistic approach to food and experience. We’re dedicated to fueling your hustle in whatever way that best propels you forward,” Greg explained.

Greg said that one of the best parts of running his business is the team members that help make up the company. “It is an absolute pleasure coming in every day and spending time with our amazing team. We have built so many amazing relationships with our Gregulars {how we refer to our regulars} in each community we have a cafe. We aim to become a part of the community, taking care of its people, and making a positive environment for people to be a part of.”
